They are versatile dishes and quick to prepare. Take enchiladas. Fill tortillas, cover with a chili pepper sauce and it is ready. Don’t let the fact that it takes no time to get it fixed fool you about the taste. The flavors are spectacular. Something magical happens when succulent chicken meets with creamy enchilada sauce and lots of cheese in whole wheat (or corn) tortillas. Of course this one is my favourite and you have endless options to create your own enchilada, stuffed with ingredients to your taste.
